Pierce each potato with a fork and microwave for about 10 minutes. In a large bowl, stir together potatoes, olive oil, garlic, salt and black pepper. Sprinkle chilli flakes if using. Drizzle the coconut oil - garlic - salt mix on top of the potatoes. Pierce potatoes with a fork and arrange in an even layer in the air fryer basket. For this recipe I used the air fryer. Using a 2-inch flat surface, press down to smash potatoes. Once the cheese is in, crumble the bacon over the top of the cheese. Bake for 15 minutes at 200 degrees C in the air fryer, or until golden and crisp. Place potatoes on a cutting board. I love air fryer baked potatoes for a side dish, meal or this appetizer. Air fry for 5 more minutes until potato skin is golden brown and the cheese is completely melted.
